Rusutsu Village

is known for its delicious local potatoes.

Inspired by this local specialty, we created our own
potato-based ramen using ingredients from the area.

was born from “denpun udon”, a home-style dish that has been eaten in Rusutsu Village, Hokkaido, since long ago.
If udon can be made from potatoes, then ramen should be possible too!
— driven by this idea, we teamed up with Futaba Seimen, a noodle maker renowned for its unique noodle craftsmanship.
The noodles are slowly aged and dried over a long period, resulting in a pleasantly chewy and smooth texture that feels just like fresh noodles.

During the noodle-making process, the amount of kansui (alkaline water), which is commonly used, is reduced to an absolute minimum. Instead, Hokkaido-grown potato starch, known for its high dietary fiber content, is kneaded into the dough, creating noodles that are gentle on the body.
